Steamed Chicken

My parents were sleeping over last weekend, and I thought I’d prepare something healthy particularly for my father.  I decided to steam some chicken breasts and it was great to eat on a cool night.  Healthy too.

What you need:

about 1 kilo chicken breasts, cut into 1 inch cubes

2 tablespoons soy sauce

2 teaspoons brown sugar

2 teaspoons salt

2 tablespoons corn flour

4 tablespoons oil

1 inch fresh ginger, chopped or sliced finely

1 medium sized onion, sliced

about 2 pieces, zucchini, cut up (optional)

tofu, cubed

water

What you need to do:

In a bowl, mix together the soy sauce, brown sugar, salt, corn flour and oil.  Add the chicken pieces and mix together.  Cover with cling wrap and let marinade for at least 15 minutes in the fridge.

Divide the chicken in serving bowls.  Distribute the ginger, onions and tofu among the bowls.  Add 1 1/2 tablespoons of water onto each bowl.  Steam each bowl over boiling water for 20 – 25 minutes.  In the last 6 minutes of steaming, add zucchini to the bowls and continue steaming.

Eat with chopsticks and serve by itself, or with steamed rice.

Tip: You can also add dried mushrooms (rehydrated and drained) if you have them.
