Pork Chops with Mushroom Sauce
Received two good news today: winning 2nd place in a school fair cake decorating competition and my brother getting a new job — yay! Sure gives one a good feeling specially when things have been a little too quiet 🙂 So I am not even looking at the news on TV and internet today as I don’t want any bad news shadowing my happy ones!
Let’s just eat pork chops instead 🙂
6 pieces pork chops (I like my chops not too thick so I used ones that were thin, but not too thin — just right)
salt and pepper
2 tablespoons plain flour (divided into 1/2 and 1 1/2 tablespoons)
2 tablespoons extra virgin olive oil (or plain olive oil, or if you just have plain cooking or canola or vegetable oil, you can use that!)
about 300 grams swiss brown mushrooms (or button mushrooms if those are what you have — I don’t like the canned ones though), sliced thinly
3 cloves garlic, minced
1 small onion, chopped
1/2 cup water
3 tablespoons sour cream divided into 1 and 2 tablespoons
1/2 – 3/4 cup chopped fresh parsley (this is optional — I do like the flavour of the parsley in the recipe but sadly, my daughter kept on picking them out of her plate so next time, I will make her sauce separate from ours)
What you need to do:
Season your chops with salt and pepper. Sprinkle on them your 1 1/2 tablespoons of flour. Heat the oil in a pan over medium high heat and cook for about 4 minutes each side r until brown, adding oil if necessary. Take out the chops from the pan and set aside. In the same pan and adding oil if you need to, add the mushrooms, garlic, onions and a pinch of salt. Stir for a while to coat the mushrooms with oil. Your mushrooms will brown in about 3 minutes. Add the remaining 1/2 tablespoon flour and stir for 3 more minutes. Pour the water in and add the 2 tablespoons of sour cream. Add the parsley (if you are using), and simmer and cook until the sauce thickens a bit, for around 1 minute. Turn off heat, and add the remaining 1 tablespoon of sour cream and mix just until combined. Pour over individual pork chops and serve with greens on the side.
