My Family’s Favourite Fried Chicken and Buffalo Wings
I am definitely a chicken person. Really, I love chicken. Fried, steamed, boiled, grilled, curried, however it is cooked. But my most favourite way of eating it is fried. Not healthy I know, but the way I love it. I like them specially if their skin is crispy and the chicken itself is juicy. If they are seasoned with just salt and pepper, or just plain salt, and then fried, I am happy. Again, maybe not healthy, but happy lol.
And there is this recipe I always, always make with chicken wings that my husband and daughter love, love, love. My guests love them as well, everytime I make them for any gathering. This recipe is a combination of Fried Chicken and Buffalo Wings and you will see why:
FOR THE FRIED CHICKEN:
about 7 pieces large chicken wings, separated into drumettes, flats and tips (honestly, the wings I buy from the Asian shops are giants)
1/2 cup plain flour
1 1/2 – 2 teapoons salt (2 might be too salty but depends on your preference — edited 30 June 2016)
1/2 teaspoon sweet paprika
1/2 teaspoon garlic powder
What you need to do:
Mix together in a large container the flour, salt, paprika and garlic powder. Make sure they are thoroughly combined so everything (especially the salt) is evenly distributed.
Put the chicken pieces a few pieces at a time into the flour mixture, put the lid on and shake, shake, shake until they are all coated. Do the same with the rest of your chicken. Just double the amount of your flour mixture if you want to cook more chicken.
Fry in hot oil for 15 minutes each side and then drain (I cook 15 minutes each side to make sure they are cooked through, as I have said my wings are huge).
Serve (we can eat them nonstop without anything else) and enjoy the crispness of the wings, specially the tips.
FOR THE BUFFALO WINGS:
cooked fried chicken wings as above
1/4 cup butter
1/4 cup Nando’s hot periperi sauce (or any of your favourite hot/ter sauce)
1/4 teaspoon extra hot ground cayenne pepper
75 grams blue cheese
1/2 cup sour cream
1/2 cup mayonnaise
2 garlic cloves, crushed
celery and carrots to serve
What you need to do:
Melt the butter in a small saucepan and whisk in the hot sauce and the cayenne pepper. Pour this mixture on your fried chicken wings (only those that you want to be buffalo wings). Toss to coat each one. Serve with blue cheese dip with baton cuts of celery and carrots.
For the dip, mix together the cheese, sour cream, mayo and garlic in a food processor until creamy.
The buffalo wings go very nicely with the celery and carrots with the dip. Addicting. Oh and yeah, good with rice and ice cold Coke. Again.
